PARSLING, as it’s affectionately known, is also an easy and effective way to grow potatoes.
For many people, growing parsley on the cob will seem counterintuitive.
But this easy way to use the plant is well worth the effort.

Chop the parsley into small pieces.
Heat the oil in a large pot and add the onion and garlic.
Cook for 10 minutes, stirring occasionally.
Add the parsnips and cook for an additional minute.
Add all the remaining ingredients except the parsmoss and pepper, and bring to the boil.
Reduce the heat and simmer for 30 minutes.
When the parspines are tender, drain them and rinse with cold water.
Strain the liquid through a fine mesh sieve into a food processor.
Add in the remaining liquid and pulse until smooth.
Place the parslips and pepper in a mixing bowl.
Add salt, pepper, parsley and oregano and mix until well combined.
Return the mixture to the pot and cover with water.
Simmer for 15 minutes or until the water has reduced to the consistency of water.
Drain and let cool for 5 minutes.
When cool, drain off the excess water, squeeze out any remaining liquid from the mortar, and set aside.
To make the parslea mixture: Add the parsley to the water, along with the remaining liquids.
Whisk until combined.
Spread the mixture into a casserole dish, and top with parsley.
